When you say OLD, it may be a Bakers Pride Y600 from the early "90s.  Those ovens had a FMEA hydraulic safety valve (PN: M1004X), which uses mercury.  If you have to push a red button and hold it in to light the pilot, then that"s what you got.  If you have to turn a knob and then push THAT in, then it"s a little newer oven with a combination valve and russfesco is correct.

That FMEA safety valve may still be available if you look around.  However, they"re not for long in this world and there"s a conversion kit for it to switch to an electromagnetic TS-11 safety valve that uses a thermocouple.  Be sure to get a heavy duty thermocouple, since deck ovens run at higher than normal temperatures.
